Why Pretzels? The Heart of Lola’s Bakeshop
When I tell people that Lola’s Bakeshop is all about pretzels, their first question is usually, “Why pretzels?”
The answer is simple — and deeply personal.
Pretzels have always had a special place in my heart. They’re delicious, comforting, and nostalgic. Growing up, soft pretzels were my favorite treat at the pool, ball games, events. Later, while studying professional baking at Johnson & Wales, I became fascinated by bread making in general: how humble ingredients — flour, water, salt, and yeast — could become something so bold, chewy, and comforting with just the right touch.
But the moment pretzels truly became part of my story was after completing my industry-focused coursework at Johnson & Wales University, when I worked at a German restaurant called The Waldhorn in Charlotte, NC. That’s where I learned the art of pretzel making the traditional way — hand-shaped, dipped in lye, and baked to a deep golden brown. I saw firsthand how much care went into every batch, and how something so simple could be elevated into something unforgettable. Those countless hours spent on pretzels became the foundation for the heart and soul of what Lola’s Bakeshop is today.
To me, a soft-baked pretzel is more than a snack. It’s a symbol of simple joy and handmade care — everything I want Lola’s Bakeshop to stand for.
Every batch we make is hand-rolled, given a proper lye bath, and baked to golden perfection. Whether it’s our signature Salted, the Parmesan Crunch with real cheese and herbs, or something sweet like CinnaLola— each pretzel tells a story. A story of slowing down, sharing something heartwarming, and savoring real, honest flavors.
Why pretzels? Because they’re delicious. Because they make people smile. And because they bring me back to what made me fall in love with baking in the first place, creating delicious food for others to enjoy!
This is just the beginning. I can’t wait to share more of Lola’s story with you — one twist at a time.
